I have a different viewpoint to consider. I know we have an understanding currently about what doves symbolize, in light of the New Testament and Jesus. However...I wonder about in the cultural context of His day... I think about what is outlined in Leviticus, about offerings to be given to the Lord. For example:
Leviticus 1:14-17 NLT
[14] “If you present a bird as a burnt offering to the Lord, choose either a turtledove or a young pigeon. [15] The priest will take the bird to the altar, wring off its head, and burn it on the altar. But first he must drain its blood against the side of the altar. [16] The priest must also remove the crop and the feathers and throw them in the ashes on the east side of the altar. [17] Then, grasping the bird by its wings, the priest will tear the bird open, but without tearing it apart. Then he will burn it as a burnt offering on the wood burning on the altar. It is a special gift, a pleasing aroma to the Lord.

Leviticus 14 also outlines the ways in which birds may be used in purification offerings.
I guess I had previously interpreted Jesus flipping tables and driving out the money changers as more about proximity of sales/preparation of the people beforehand before coming into the temple...the possibility of unequal weights/measures, people being charged an unfair rate (think convenience store price vs grocery store price in modern context -- people will pay a premium/increased price for convenience or in a time of high need...that they may not pay if they had been prepared/purchased elsewhere).
Just my two cents for consideration.
